2 avocados
200g crème fraîche
1tbsp lemon juice
½tsp salt
a little pepper

To fill

8 freshly baked sesame bagels, halved, toasted
250g roast beef sliced
1bunch radish, thinly sliced
1 spring onion incl. green part, thinly sliced
25g cress

How it's done

Avocado cream

Cut the avocados in half, remove the stones, scoop out the flesh, mash with a fork. Stir in the crème fraîche and lemon juice, season.

To fill

Fill the bagels with the avocado cream and all the remaining ingredients.
