Apricots & spice mixture

100g coarse sea salt
50g soft dried apricots (sour), roughly chopped
30g coarse cane sugar
2tbsp dried rosemary
2tsp garlic powder
1tsp chilli powder
1tsp mild curry powder

For 3 jars approx. 100 ml each

How it's done

Apricots & spice mixture

Mix all the ingredients, roughly grind in a food processor and spread over an oven tray lined with baking paper.

Bake & dry

for approx. 10 mins. in the centre of an oven preheated to 150°C. Remove the spice mix, allow to cool completely, spoon into the jars and seal well.

Shelf life: in a cool, dark place for approx. 6 months.
That fits: pasta, fish, meat.
