Through his ongoing advanced training as a “Weinakademiker” and his completed training as a restaurateur and an ASSP Certified Sommelier in high-end Swiss hotels, Raphael Tanner has experienced first-hand the fascinating world of fine dining. Sharing a meal and a bottle of wine and an appreciation of this millennia-old culture are a source of great pleasure for Raphael, as well as instilling in him a connection with nature and a deep respect for the winemaker’s craft. At the Coop Cooperative, Raphael Tanner is responsible for, among other things, Wine & Food and Fine Dining.

Raphael loves tucking into a delicious Sunday meal with the whole family but, even as a child, he was very keen on helping out with the cooking. These days, he listens to classical music, jazz or old-school hip-hop while trying out different cooking methods in the kitchen or preparing lentil soup to soothe the soul.

Do you have a favourite cooking buddy?

I prefer cooking alone. I love baking with my son.

Do you have a secret ingredient that gives your dishes that special edge?

I like to cook with the classics, salt and pepper. Nutmeg and bay leaves are underrated.

What was your favourite food as a child?

Riz Casimir, mince with macaroni and apple sauce, and Honigschnitte (honey cake slices).

What food can't you stand?

Pickled aubergines.

What dish or ingredient have you recently rediscovered?

I’ve recently discovered the Peruvian rice dish Arroz Chaufa. I've rediscovered steamed salmon with vegetables.

What ingredients do you always have in the fridge?

Milk, butter, oat or rice milk, and salad.

For whom would you like to have the opportunity to cook?

I most enjoy cooking for family and friends.

Which wine do you always have on your wine rack at home?

Riesling, champagne and Pinot Noir.

Which is your favourite country for wines? And why?

France, the diversity and high quality set it apart.

Cork or screw-top?

Either. What counts is the contents.

White wine, red wine or beer?

It depends on the occasion and the food.

Which is your favourite cooking wine?

One that is also good to drink.

Usually, the wines that appeal to me are unfiltered. But as a basis for decision-making, it makes no difference.
