Blind baking

No fear of burning – with blind baking you don’t have to close your eyes! It is a baking technique whereby a pastry case is baked without filling first to ensure it is nice and crispy. To make sure the case keeps its shape and doesn’t bubble up, it is covered with pulses. In this method the dough is no longer visible – hence the name!
