Sauce

150 g plain greek yoghurt
1 tbsp mayonnaise
1 tbsp lemon juice
1 tsp mustard
1 garlic clove, grated
½ bunch flat-leaf parsley, finely chopped
salt and pepper to taste

Mince mixture

500 g minced meat (beef)
150 g red peppers, cut into cubes
½ onion, finely chopped
1 garlic clove, finely chopped
½ bunch flat-leaf parsley, finely chopped
1 tsp sweet paprika
1 tsp dried oregano
½ tsp smoked paprika
½ tsp cumin
1 tsp salt
a little pepper

Tortillas

6 wheat tortillas (approx. 40 g each)
4 wooden skewers

Kebabs

olive oil for frying

Sauce

Place the yoghurt and all ingredients up to and including the parsley in a small bowl, mix well, season, cover and chill.

Mince mixture

Place the mince in a bowl along with all the other ingredients up to and including the pepper, mix, knead well by hand until the ingredients have combined to form a compact mass.

Tortillas

Trim the edges of the tortillas to make 6 large squares. Spread the mince mixture on top. Stack the tortillas on top of each other, press down gently, divide into thirds. Turn the tortilla strips so the meat is facing forward, join them together, pierce with 4 skewers and cut into four equal pieces.

Kebabs

Heat the oil in a wide non-stick frying pan. Place the skewers in the pan and fry for approx. 10 mins. all over. Remove from the pan and plate up with the yoghurt sauce.

Good to know
Tip: Sprinkle approx. 250 g of grated Cheddar over one side of each kebab, cover and allow to melt, serve.
Tip: The tortilla skewers can be baked in the oven. Baking: approx. 15 min. in the middle of an oven preheated to 180 °C. Distribute the cheddar cheese on the skewers and bake for approx. 5 min.
