Chai syrup

1 ½ dl water
2 bag Chai Tea
80 g sugar

Mocktail

some ice cubes
4 cl non-alcoholic gin
2 cl lemon juice
1 dl sparkling mineral water

To serve

1 star anise
1 slice organic lemon, cut in half

Chai syrup

Bring the water to the boil in a pan. Remove the pan from the heat, add the tea bags, cover and leave to steep for approx. 10 mins. Remove the teabags. Add the sugar to the tea, bring to the boil, reduce to a syrupy consistency for approx. 8 mins. (yields approx. 100 ml). Leave the syrup to cool.

Mocktail

Place several ice cubes in the glass. Add the gin, lemon juice and 1½ tbsp chai syrup, stir. Set aside the remainder of the syrup (see tip). Top up with mineral water.

To serve

Decorate the mocktail with star anise and a slice of lemon.

Good to know
Note: The mocktail can also be measured using a tablespoon or teaspoon. 1½ cl is equivalent to 1 tbsp and ½ cl is equivalent to 1 tsp.
Tip: The chai syrup makes enough for approx. 4 drinks. Bring the remainder of the syrup to the boil once more, pour into a clean, warmed bottle (approx. 100 ml) while still boiling hot, seal immediately. Storage: Keep in a cool, dark place for approx. 2 months. Once opened, store the bottle in the fridge and consume the syrup quickly.
