These juicy, fluffy plum muffins are simply bursting with plums. With a hint of cinnamon and lots of fruit, these muffins are a little autumn treat for your taste buds. What's not to love!

Muffin mixture

300 g white flour
100 g cane sugar
2 tsp baking powder
1 ½ tsp cinnamon
3 eggs
180 g vanilla yoghurt
1 ½ dl rapeseed oil
1 tsp vanilla paste
4 plums, cut into cubes

Muffins

6 plums, halved, pitted

To bake

icing sugar, to dust

12-hole muffin tin (each hole approx. 7 cm in diameter), lined with muffin cases

Muffin mixture

Mix the flour, sugar, baking powder and cinnamon in a bowl. Combine the eggs, yoghurt, oil and vanilla paste, add to the flour, mix together. Mix in the plums.

Muffins

Transfer the mixture to the prepared tin, place a plum half on top of each muffin, press in.

To bake

Approx. 30 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow the muffins to cool slightly, remove from the tin, leave to cool completely on a rack. Dust the muffins with icing sugar.

Good to know
Tip: Use an ice cream scoop to portion the muffin mixture into the muffin tin. This will ensure the mixture is divided evenly and it creates less mess.
