Grapefruit syrup

1 dl grapefruit juice
20 g sugar
1 sprig thyme

Cocktail

2 ½ cl gin
1 fresh egg white
some ice cubes

To serve

1 slice grapefruit, quartered
1 sprig thyme

Grapefruit syrup

Place the grapefruit juice, sugar and thyme in a pan, bring to the boil, reduce to a syrup for approx. 5 mins. (yields approx. 3 tbsp) . Leave the syrup to cool, remove the thyme.

Cocktail

Place the gin and egg white in the shaker along with the syrup, top up with ice cubes, shake well for approx. 30 secs. Pour the cocktail through a sieve into the glass.

To serve

Decorate the cocktail with grapefruit and thyme.

Good to know
Tip: Instead of gin, use sparkling water.
Note: The cocktail can also be measured using a tablespoon or teaspoon. 1½ cl is equivalent to 1 tbsp and ½ cl is equivalent to 1 tsp.
