Quinoa

1 tbsp olive oil
250 g quinoa
1 onion, finely chopped
5 dl water
1 ¼ tsp salt
3 bunch mixed herbs (e.g. basil, thyme, parsley)
1 organic lemon use grated zest and 1 tbsp of juice

Burgers

600 g minced meat (beef and pork)
1 ½ tbsp mustard
1 ½ tsp chilli flakes
1 ½ tsp salt
a little pepper
60 g Camembert, cut into 4 pieces
4 slice cured ham

Quinoa

Heat the oil in a pan. Add the quinoa and onion, sauté briefly. Pour in the water, season with salt, bring to the boil, cover the quinoa and simmer over a low heat for approx. 20 mins. until soft. Mix in the herbs, lemon zest and juice.

Burgers

Place the mince in a bowl along with all the other ingredients up to and including the pepper, knead well until the ingredients have combined to form a compact mass. Divide the mixture into 4 portions, shape into balls with wet hands. Place one piece of cheese on each slice of cured ham, shape into parcels. Press down onto the raw burgers with your thumbs to make a cavity. Insert the ham parcels and cover over with the mince.

Charcoal/gas/electric grill

With the lid down, grill the burgers over/on a medium heat (approx. 200°C) for approx. 8 mins. on each side. Serve the burgers with the herbed quinoa.

Good to know
Tip: Use fig mustard instead of regular mustard.
