Batter

75 g white flour
1 pinch salt
1 ½ dl milk
½ dl sparkling mineral water
2 fresh eggs
25 g butter, melted, left to cool

Omelettes

clarified butter
8 tbsp rolled oats
2 tbsp sugar

Cherry filling

500 g cherries, cut in half
1 tbsp icing sugar
1 lime, rinsed with hot water, dabbed dry, use grated zest and 1 tbsp of juice
250 g half-fat quark

Batter

Mix the flour and salt in a bowl, create a well in the middle. Whisk together the milk, water, eggs and butter. Gradually pour the liquid into the well while stirring with a whisk, continue to whisk until the batter is smooth. Cover and leave to stand at room temperature for approx. 30 mins.

Omelettes

Heat a little clarified butter in a non-stick frying pan. Reduce the heat, add 1 tbsp of oats and a little sugar to the pan, briefly caramelize. Pour enough batter into the pan to thinly cover the base. Reduce the heat. Once the underside is cooked and separates from the pan, turn the omelettes, finish cooking and then keep warm. Repeat this step seven more times.

Cherry filling

Mix the cherries, icing sugar, lime zest and juice, leave to absorb for approx. 10 mins. Spread the quark over the omelettes, top with the cherries, serve.

Good to know
Tip: Mix some peppermint leaves with the cherries.
