Mousse

250 g vegan dark chocolate, finely chopped
500 g silken tofu
1 ½ dl soya drink
50 g icing sugar
1 parcel vanilla sugar
1 organic orange, use a little grated zest, juice set aside

Orange sauce

1 organic orange
1 tbsp sugar
1 tbsp orange jam

To serve

50 g vegan dark chocolate, shaved into thin strips using a peeler

Mousse

Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Puree the silken tofu with the soya drink, icing sugar, vanilla sugar and orange zest, add the chocolate, briefly puree. Pour the mixture into the ramekins, cover and chill for approx. 2 hrs.

Orange sauce

Thinly peel the orange zest using a peeler, cut into thin strips, place in a pan. Squeeze out the orange, add to the pan along with the reserved juice (yields approx. 150 ml). Mix in the sugar, bring to the boil, reduce the heat, simmer for approx. 10 mins. Mix in the jam, leave to cool.

To serve

Top the mousse with the orange sauce and chocolate shavings.
