3 tbsp white balsamic vinegar
3 tbsp olive oil
½ tbsp Dried peppermint leaves, finely crushed
¼ tsp salt
a little pepper


2 courgettes, thinly sliced
200 g mini courgettes, finely sliced lengthwise
2 tbsp pine nuts, roasted
4 sprigs oregano, torn into pieces

How it's done

Mix the vinegar, oil and mint in a bowl, season.


Add the dressing to the courgettes, mix everything together, leave to infuse for approx. 10 mins. Sprinkle the pine nuts and oregano on top.

Good to know
Tip: Instead of dried peppermint leaves, use fresh peppermint leaves, finely chopped.
