Pizza dough

400 g multi grain flour
1 ½ tsp salt
¼ cube yeast (approx. 10 g), crumbled
2 dl water
2 tbsp olive oil
2 tbsp basil, finely chopped

Strawberry sauce

½ tbsp olive oil
100 g strawberries, cut into pieces
1 tsp sugar
1 tbsp balsamic vinegar
1 pinch salt
a little pepper

Topping

300 g strawberries, cut in half
125 g mozzarella, torn into pieces
a little pepper

To bake

100 g blue cheese (e.g. Gorgonzola), cut into pieces
½ bunch basil, leaves torn off

How it's done

Pizza dough

Mix the flour, salt and yeast in a bowl. Add the water, oil and basil, knead to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 1½ hrs. until doubled in size.

Strawberry sauce

Heat the oil in a pan. Add the strawberries and sugar, cook for approx. 3 mins. Add the balsamic, season, cover and simmer for approx. 5 mins. until soft, puree and set aside.

Topping

On a lightly floured surface, roll out the dough into a rectangle (approx. 30 x 40 cm), place on a baking tray lined with baking paper. Spread the strawberries and mozzarella on top, season.

To bake

Approx. 25 mins. on the bottom shelf of an oven preheated to 240°C. Remove from the oven, top with the cheese, basil and reserved strawberry sauce.
