Base

1 pastry dough, rolled into a circle
150 g amaretti, crumbled

Filling

250 g Mascarpone
2 tsp lemon juice
2 eggs
50 g sugar
600 g cherries, pitted (yields approx. 500 g)

To bake

a little icing sugar

One tart tin (approx. 28 cm in diameter)

How it's done

Base

Roll out the dough, place in the tin along with the baking paper, prick firmly, sprinkle with 1/3 of the amaretti.

Filling

Mix together the mascarpone, lemon juice, eggs and sugar in a bowl. Carefully mix in the cherries. Spread the filling over the base, sprinkle with the remainder of the amaretti.

To bake

Approx. 35 mins. in the lower half of an oven preheated to 220°C. Remove from the oven, leave to cool, dust with icing sugar.
