600g beans

How it's done

Bring the water to the boil. Blanch the beans in batches for approx. 3 mins., remove with a slotted spoon, cool immediately in ice-cold water. Remove, drain well.

Good to know
Note: Always blanch vegetables in batches otherwise the water cools too quickly. Bring the water back to the boil before adding the next batch.
Tip: Place the bacon on a chopping board, arrange the beans on top, roll up into little bundles. Heat a little clarified butter in a frying pan. Fry the bean bundles for approx. 5 mins. all over.
