Ice cream sandwiches

100g chocolate ice cream, defrosted
2tbsp unsalted, shelled pistachios, roughly chopped
8 biscuits (e.g. chocolate cookies)

Chocolate glaze

1bag dark cake icing (approx. 125 g), melted
1tbsp unsalted, shelled pistachios, roughly chopped

How it's done

Ice cream sandwiches

Mix the ice cream with the pistachios. Spoon approx. 2 tbsp of ice cream onto 4 separate biscuits, top with the remaining biscuits. Freeze the biscuit sandwiches for approx. 30 mins.

Chocolate glaze

Dip the ice cream sandwiches halfway into the glaze, sprinkle with pistachios, dry for approx. 2 mins. on a rack. Freeze for a further 30 mins.
