Cottage cheese filling

200g plain cottage cheese, rinsed, drained
50g dried tomatoes, finely chopped
2tbsp basil, finely chopped
to taste salt
to taste pepper


2 aubergines, cut into slices 1 cm thick
2tbsp olive oil
½tsp salt
a little pepper

How it's done

Cottage cheese filling

Mix the cottage cheese, tomatoes and basil in a bowl, season.


Brush both sides of the aubergine slices with oil. Place the aubergine on a hot griddle and fry in batches on both sides for approx. 7 mins., season. Top half of the aubergine slices with 1 tbsp each of the cottage cheese, cover with the remaining aubergine slices.
