Nectarines

1 tbsp Maizena cornflour
1 tbsp lemon juice
600 g nectarines, cut into wedges
50 g sugar
1 parcel vanilla sugar
¼ tsp cinnamon

Batter

120 g white flour
80 g sugar
1 tsp baking powder
¼ tsp bourbon vanilla powder
1 pinch salt
1 dl milk
75 g butter, melted, left to cool

One ovenproof dish (approx. 1 l), greased

Nectarines

Mix the cornflour and lemon juice in a bowl. Add the nectarines and all the other ingredients up to and including the cinnamon, mix, transfer to the prepared dish.

Batter

In a bowl, mix the flour with all the other ingredients up to and including the salt. Pour in the milk and butter, mix. Spread the batter on top of the nectarines.

To bake

Approx. 40 mins. in the centre of an oven preheated to 180 °C. Remove, allow to cool slightly.

Good to know
Serve with: Raspberry sorbet
Tip: Instead of nectarines, use peaches.
