Onions

1 red onion, thinly sliced
½ dl water
3 tbsp white wine vinegar
¼ tsp sugar
¼ tsp salt

Chicken

1 tbsp olive oil
2 chicken breasts (each approx. 150 g)
1 tsp hot paprika
½ tsp salt
1 organic lemon, use a little grated zest and 1 tbsp of juice

Whipped feta

100 g feta, cut into pieces
100 g plain greek yoghurt

How it's done

Onions

Place the onion in a pan along with all the other ingredients up to and including the salt, mix, bring to the boil. Cover and simmer for approx. 2 mins., set aside.

Chicken

Heat the oil in a non-stick frying pan. Season the chicken breasts, fry for approx. 7 mins. on each side. Place the chicken breasts in a bowl, pull apart using two forks. Add the lemon zest and juice, mix.

Whipped feta

Place the feta and yoghurt in a measuring cup, puree until creamy.

To serve

Spread the whipped feta on a platter. Top with the chicken and onions.

Serve with: Toasted pita bread
