Marinade

½ tbsp olive oil
½ tbsp liquid honey
¼ tsp cinnamon

Persimmons

1 persimmon, cut in half
½ tbsp olive oil

To serve

150 g plain greek yoghurt
2 tbsp salted, roasted pistachios, roasted, coarsely chopped
1 tbsp liquid honey

Marinade

Mix the oil, honey and cinnamon in a small bowl.

Persimmons

Brush the persimmon with the marinade. Heat the oil in a non-stick frying pan. Place the persimmon in the pan and fry for approx. 4 mins. on each side.

To serve

Plate up the yoghurt, top with the persimmon. Sprinkle with pistachios and drizzle with honey.
