Confit

1 tbsp olive oil
180 g red onions, cut into thin slices
2 tbsp red wine vinegar
1 red chilli, deseeded, finely chopped
1 tbsp sugar
¼ bunch thyme, leaves torn off

Sandwiches

8 slice nut bread (approx. 400 g)
100 g Gouda , coarsely grated

Confit

Heat the oil in a pan. Add the onions, cook over a low heat for approx. 10 mins., stirring occasionally. Add the vinegar, chilli, sugar and thyme, cover and cook for approx. 10 mins., stirring occasionally.

Sandwiches

Spread 4 slices of bread with the onion confit, sprinkle with cheese. Top each with another slice of bread, toast for approx. 4 mins in a sandwich toaster until the cheese melts.

Good to know
Serve with: Leaf salad
Tip: Toast the sandwiches in a non-stick frying pan for approx. 5 mins. on each side.
