How it's done
Rub the quince clean with a towel, peel, quarter, core and cut into cubes. Mix the quince and sugar in a pan, pour in the water, cover and simmer for approx. 20 mins. until soft. Leave the quince to cool, puree until smooth.
Spoon 3 cl of the quince puree into a champagne glass, top up with champagne, serve immediately.
|Tip:||There should be enough quince puree for approx. 8 champagne glasses. The remainder of the puree can be stored in a sealed container in the fridge for approx. 3 days. Frozen in portions in an ice cube tray, the quince puree will keep for approx. 3 months.|
|Note:||3 cl is equivalent to approx. 2 tbsp.|
