Herbal tea

5 dl water
1 bag verbena tea
1 bag green tea
¼ bunch thyme, torn into pieces
2 sprigs rosemary, torn into pieces
2 sprigs sage, torn into pieces
2 tbsp sugar

Cocktail

6 cl gin
2 cl Rose's Lime
some ice cubes
1 organic lime, in slices
1 sprig thyme

Herbal tea

Bring the water to the boil in a pan. Add the tea bags, herbs and sugar, remove the pan from the heat, cover and leave to steep for approx. 15 mins. Strain the tea and leave to cool.

Cocktail

Pour the gin, Rose's Lime and 50 ml of herbal tea into the shaker, top up with ice cubes, shake well for approx. 30 secs. Pour the cocktail through a fine sieve into a glass. Garnish the cocktail with a slice of lime and a sprig of thyme.

Good to know
Note: The cocktails can also be measured using a tablespoon or teaspoon. 1½ cl is equivalent to 1 tbsp and ½ cl is equivalent to 1 tsp.
Tip: Mix the remainder of the herbal tea with 2 tbsp of lemon juice to make iced tea.
