Mash

400 g sweet potatoes, peeled, diced
salted water, boiling

Topping

2 tbsp olive oil
100 g chorizo, peeled, diced
¼ bunch sage
½ lime, the whole juice
¼ tsp salt

How it's done

Mash

Cook the sweet potatoes in salted water for approx. 20 mins. until soft, drain, mash with a fork or potato masher.

Topping

Heat the oil in a frying pan. Stir fry the chorizo and sage for approx. 5 mins. until crispy. Drizzle the chorizo, sage, oil and lime juice over the mash, season with salt.

Good to know
Tip: Instead of boiling the sweet potatoes, bake them whole in their skins in the oven. Bake for approx. 35 mins. in the centre of an oven preheated to 220°C.
