Tomato sambal

1 tbsp olive oil
1 red onion, finely chopped
½ tsp mustard seeds
400 g vine-ripened tomatoes, cut into cubes
2 tbsp apple vinegar
1 tbsp cane sugar
1 red chilli, finely chopped
½ tsp nutmeg
½ tsp cinnamon
½ tsp salt


750 g tomatoes *-*
250 g smoked scamorza , cut into pieces
1 ½ tbsp olive oil
½ tsp sea salt
3 sprigs basil, leaves torn off

Tomato sambal

Heat the oil in a small pan. Add the onion and mustard seeds, sauté for approx. 5 mins. Add the tomatoes, vinegar, sugar and chilli, simmer uncovered for approx. 5 mins., season, leave to cool.


Arrange the tomatoes and cheese on a platter, drizzle with the oil, season with salt. Garnish the salad with the sambal and basil.
