4 courgettes (each approx. 200 g)


200 g feta, roughly crumbled
80 g pitted green olives, cut into rings
1 garlic clove, squeezed
5 sprigs thyme, leaves torn off
1 tbsp olive oil
1 organic lemon, grated zest and 2 tbsp of juice
¼ tsp salt
a little pepper

To bake

1 tbsp liquid honey

Halve the courgettes lengthwise, remove the flesh with a spoon, finely chop the flesh and place in a bowl. Place the courgette halves in the prepared dish.


Mix the feta, olives, garlic, thyme, oil, lemon zest and lemon juice with the chopped courgette, season. Stuff the courgettes with the filling.

To bake

Approx. 40 mins. in the centre of an oven preheated to 200°C. Remove, drizzle with honey.
