Pineapple mixture

One shallow dish (holding approx. 2 l), lined with baking paper
How it's done
Pineapple mixture
Mix the pineapple, water, rum and sugar in a pan, bring to the boil, cover and simmer gently for approx. 2 mins. Puree the mixture and press through a sieve, leave to cool.
Coconut mixture
Mix the coconut milk, rum and sugar in the prepared dish. Cover and freeze the mixture for approx. 3 hrs., stirring twice with a whisk. Spread the pineapple mixture over the top, cover and freeze for approx. 6 hrs. Remove the mixture from the dish and cut into approx. 5 cm cubes.
Tip: | Cut the other half of the pineapple into cubes, serve alongside. |
