Honey mustard: her «secret ingredient» that she can’t go without.
Vanessa, our FOOBY Leader, «inherited» her love for cooking, eating and trying new things from her mother and her grandmother. Her favourite dish depends on what kind of mood she’s in, but usually with curries, sushi or pasta, she can’t go wrong. In addition to this, a warm porridge (which she discovered in London) or waffles (the smell of which reminds her of her childhood) can also do just the trick.
Vanessa leads the FOOBY team and spends many a day working with great people, cooking, eating and discussing.
Have you a favourite cooking partner?
My mum. I learned everything from her and I still love cooking together with her in the kitchen. I also love to cook alone – it’s very relaxing and no one gets in the way.
How do you come up with your kitchen creations?
Most of the time I’m inspired by the leftovers in my fridge – I figure out what I could cook with them before they go off. From this, stems a lot of new and creative combinations.
Which dishes or ingredients have you «newly» discovered?
The Dukkah spice mix. Any time I season a dish with this it gives it a delicious Middle Eastern flavour.
What smell evokes positive memories in you?
Waffles. The smell reminds me of my childhood. Which food can you not stand at all? Olives – which is such a pity because I love the Italian cuisine. For this reason, I always leave something behind every antipasti plate I order! Luckily my partner loves olives and usually takes care of the leftovers.
What is the most important meal of the day for you?
Somehow, I can’t imagine skipping any of the meals. If I had to decide on a favourite it would probably have to be dinner because there’s nothing better than ending a good day with some nice food (and a good glass of wine).
The most important spices in my kitchen are turmeric and chilli.
