Cauliflower crostini

Ingredients

for 8 pieces

Cauliflower
1 tbsp butter
300 g cauliflower, cut into florets, halved if necessary
¼ tsp salt
a little  pepper
1 dl water
Dressing
1 tbsp lemon juice
1 tbsp olive oil
1 tsp liquid honey
2 pinch salt
a little  pepper
To serve
8 slice brown bread, roasted
125 g cream cheese
40 g pickled onions (borettane) , cut in half
20 g Micro Greens
organic lemon, peeled with a peeler, finely sliced

How it's done

Cauliflower

Heat the butter in a pan. Add the cauliflower, sauté for approx. 4 mins., season. Pour in the water, cover and simmer for approx. 5 mins. until soft.

Dressing

Whisk the lemon juice, oil and honey in a bowl, season, add the cauliflower, mix.

To serve

Spread the cream cheese onto the slices of bread, top with the cauliflower. Garnish with the onions, micro greens and lemon zest.
