Cauliflower crostini
Ingredients
for 8 pieces
| 1 tbsp | butter |
| 300 g | cauliflower, cut into florets, halved if necessary |
| ¼ tsp | salt |
| a little | pepper |
| 1 dl | water |
| 1 tbsp | lemon juice |
| 1 tbsp | olive oil |
| 1 tsp | liquid honey |
| 2 pinch | salt |
| a little | pepper |
| 8 slice | brown bread, roasted |
| 125 g | cream cheese |
| 40 g | pickled onions (borettane) , cut in half |
| 20 g | Micro Greens |
| 1 | organic lemon, peeled with a peeler, finely sliced |
How it's done
Cauliflower
Heat the butter in a pan. Add the cauliflower, sauté for approx. 4 mins., season. Pour in the water, cover and simmer for approx. 5 mins. until soft.
Dressing
Whisk the lemon juice, oil and honey in a bowl, season, add the cauliflower, mix.
To serve
Spread the cream cheese onto the slices of bread, top with the cauliflower. Garnish with the onions, micro greens and lemon zest.
