Stracciatella di burrata and mortadella
Ingredients
for 4 people
| 50 g | capers, drained |
| 3 tbsp | white flour |
| ¼ tsp | salt |
| 2 tbsp | olive oil |
| 100 g | mascarpone |
| 2 tbsp | water |
| 2 tbsp | light sultanas, coarsely chopped |
| ¼ tsp | salt |
| a little | pepper |
| 150 g | burrata |
| 100 g | Mortadella sausage in slices |
How it's done
Capers
Toss the capers in the flour, season with salt. Sieve away any excess flour, salt the capers. Heat the oil in a frying pan. Fry the capers for approx. 3 mins. until crispy, remove, drain on kitchen paper.
Stracciatella
Mix the mascarpone with all the other ingredients up to and including the pepper, serve on a platter. Add the burratas, crush gently with a fork.
To serve
Arrange the mortadella on top of the burrata, sprinkle the capers on top.
