Patatas bravas con mojo verde (Spicy Spanish potatoes with a green sauce)

Ingredients

for 2 person

Patatas
800 g waxy potato peeled, cut into 1 cm pieces
4 tbsp olive oil
garlic clove
1 tbsp paprika
2 tsp salt
Mojo verde
1 dl olive oil
2 tbsp apple vinegar
garlic clove
½ bunch parsley, leaves torn off
½ bunch chives, roughly chopped
½ bunch coriander, roughly chopped
red chilli pepper, roughly chopped

How it's done

Patatas

Spread the potatoes on a baking tray lined with baking paper. Puree the oil with all the other ingredients up to and including the salt, mix with the potatoes. Bake for approx. 25 mins. in the centre of an oven preheated to 240°C.

Mojo verde

In a blending cup, puree the oil with all the other ingredients up to and including the chilli pepper. Serve with the potatoes.
