Patatas bravas con mojo verde (Spicy Spanish potatoes with a green sauce)
Ingredients
for 2 person
| 800 g | waxy potato peeled, cut into 1 cm pieces |
| 4 tbsp | olive oil |
| 1 | garlic clove |
| 1 tbsp | paprika |
| 2 tsp | salt |
| 1 dl | olive oil |
| 2 tbsp | apple vinegar |
| 1 | garlic clove |
| ½ bunch | parsley, leaves torn off |
| ½ bunch | chives, roughly chopped |
| ½ bunch | coriander, roughly chopped |
| 1 | red chilli pepper, roughly chopped |
How it's done
Patatas
Spread the potatoes on a baking tray lined with baking paper. Puree the oil with all the other ingredients up to and including the salt, mix with the potatoes. Bake for approx. 25 mins. in the centre of an oven preheated to 240°C.
Mojo verde
In a blending cup, puree the oil with all the other ingredients up to and including the chilli pepper. Serve with the potatoes.
