Feta burgers with asparagus, hummus and pistachios
Ingredients
for 2 person
200 g | feta |
1 | egg |
4 tbsp | breadcrumbs |
4 tbsp | chopped pistachios |
1 tbsp | olive oil |
120 g | green asparagus tips |
1 tbsp | olive oil |
salt to taste | |
2 | black burger buns |
150 g | hummus |
4 | lettuce leaves |
How it's done
Fried feta
Cut the feta into 2 equal pieces. Beat the egg in a deep dish. Mix the breadcrumbs and pistachios in a dish. Toss the feta in the egg and then in the breadcrumbs, firmly pressing on the crumb coating. Heat the oil in a frying pan, fry the feta for 2-3 mins. on each side until crispy.
Burger and vegetables
Stir fry the asparagus in olive oil for approx. 5 mins. until al dente, season. Cut the bread rolls in half, bake for approx. 5 mins. in an oven preheated to 220°C.
