Egg and avocado wrap bites
Ingredients
for 24 pieces
| 2 | hard-boiled eggs, chopped |
| 1 piece | avocado, diced |
| 100 g | Appenzeller Mostbröckli (beef sausages) in slices, finely chopped |
| ½ | onion, finely chopped |
| ½ bunch | chervil, roughly chopped |
| 1 tsp | lemon juice |
| ¼ tsp | salt |
| a little | pepper |
| 4 | wheat tortillas |
| 1 tbsp | olive oil |
How it's done
Mixture
Mix the eggs and all the ingredients up to and including pepper.
Shape
Coat the tortillas with the mixture and roll up tightly. Heat a little oil in a non-stick frying pan. Fry the rolls on all sides for approx. 3 mins., remove and slice.
