Tom Kha Tofu (Thai coconut soup)
Ingredients
for 2 person
| 5 dl | coconut milk |
| 2 dl | water |
| 1 ½ tsp | ginger, finely grated |
| 1 stick | lemongrass, halved lengthwise |
| 3 | lime leaves (Citrus hystrix) (Thai Kit) (Thai-Kit) |
| 1 tbsp | lime juice |
| ½ tbsp | sugar |
| a little | salt |
| 200 g | Karma Bio Tofu nature, cut into cubes |
| 1 | red chilli, deseeded, cut into thin rings |
| some | basil leaves |
How it's done
Bring the coconut milk, water, ginger, lemongrass and Lime leaves to the boil in a pan, cover and simmer for approx. 5 mins., stirring occasionally. Season with the lime juice, sugar and a little salt. Remove the Lime leaves and lemongrass, reduce the heat. Add the tofu, steep for approx. 5 mins., divide the soup into bowls, garnish with chilli, serve.
