Grilled jumbo prawns

Ingredients

for 4 person

lime, the whole juice
2 tbsp sesame oil
1 tsp dark soy sauce
1 bunch peppermint, finely chopped
red chilli pepper, deseeded, finely chopped
1 tsp sugar
12  peeled raw prawn tails (organic) (approx. 450 g), insides removed
¾  salt
lime, rinsed with hot water, dabbed dry, cut into wedges

How it's done

Mix together the lime juice and all the ingredients up to and including the chilli pepper. Halve the marinade, stir the sugar into one half and set aside as the sauce. Brush the prawns with the remaining seasoning mix, salt.

Grill over/on a medium heat (approx. 200 °C for approx. 2 mins. each side.
