Lamb's lettuce with apple and celeriac dressing
Ingredients
for 4 person
½ tbsp | mustard |
3 tbsp | apple vinegar |
4 tbsp | rapeseed oil |
1 tbsp | mayonnaise |
1 tsp | liquid honey |
50 g | low-fat quark |
¼ tsp | salt |
a little | pepper |
75 g | celeriac, very thinly sliced |
1 | red-skinned apple, diced |
100 g | lambs' lettuce |
1 tbsp | pumpkin seeds, toasted, roughly chopped |
How it's done
In a bowl, whisk the mustard with all the other ingredients up to and including the quark, season, set aside 4 tbsp of the dressing. Mix the celeriac and apple into the remaining dressing, leave to infuse for approx. 30 mins. Plate up the apple & celeriac salad together with the lamb's lettuce, drizzle the reserved dressing over the lamb's lettuce. Sprinkle with pumpkin seeds.
