Rice bowl with mince
Ingredients
for 4 person
| 250 g | basmati rice |
| 4 dl | water |
| ½ tsp | salt |
| 1 | cucumber, cut into 1 cm cubes |
| 2 tbsp | soy sauce |
| 2 tbsp | rice vinegar |
| 2 tbsp | preserved ginger, finely chopped |
| 1 tbsp | olive oil |
| 300 g | minced meat (beef) |
| 2 | garlic cloves, squeezed |
| 2 stick | lemongrass, core finely chopped |
| ½ dl | soy sauce |
| 2 ½ dl | coconut milk |
| 1 ½ tbsp | red curry paste |
| 1 stick | lemongrass, core finely chopped |
How it's done
Rice
Rinse the rice in a sieve under cold running water until the water runs clear, then drain well. Place the water, rice and salt in a pan, bring to the boil. Cover the rice and leave to fluff up over a very low heat for approx. 15 mins.; do not remove the lid. Separate the rice with a fork, leave to cool.
Cucumber salad
In a bowl, mix the cucumber with all the other ingredients up to and including the ginger.
Mince
Heat the oil in a non-stick frying pan. Add the mince, fry for approx. 4 mins. Reduce the heat. Add the garlic and lemongrass, sauté for approx. 3 mins. Add the soy sauce, mix.
Sauce
Place the coconut milk, curry paste, and lemongrass in a pan, bring to the boil, simmer for approx. 3 mins.
To serve
Divide the rice between the bowls, top with the mince and cucumber. Serve with the sauce.
