| 3 dl | water |
| 2 tbsp | apple vinegar |
| 100 g | herb bacon, sliced, cut into wide strips |
| 1 | pear x |
How it's done
Dough
Mix the flour, salt and yeast in the food processor bowl. Add the water and vinegar, knead into a soft, smooth dough using the dough hook on a food processor for approx. 8 mins. Add the bacon, knead for a further 2 mins. Cover and leave to rise at room temperature for approx. 1½ hrs. until doubled in size.
Bread
Place the dough on a lightly floured work surface, shape into a ball. Cut a sheet of baking paper slightly larger than the bread, place the ball of dough on top, spread the pear slices over the dough, press down firmly, leave to rise again for approx. 30 mins.
To preheat
Place the pot (incl. lid) in the lower half of a cold oven. Preheat the oven to 220 °C.
To bake
Place the dough and baking paper in the hot cooking pot, cover and bake for approx. 30 mins. Remove the lid and bake for a further 10 mins. Remove from the oven, leave the bread to cool on a rack.
