Baked Mediterranean-style feta eggs
Ingredients
for 4 portions
| 300 g | cherry tomatoes |
| 200 g | courgettes, cut into slices approx. 1 cm wide |
| 1 | red pepper, cut into slices approx. 1 cm wide |
| 1 | red onion, coarsely chopped |
| 2 tsp | dried Italian herbs |
| ½ tsp | salt |
| a little | pepper |
| 200 g | feta, crumbled |
| 150 g | baby spinach, coarsely chopped |
| 4 | fresh eggs |
How it's done
Vegetable mixture
In a bowl, mix the tomatoes with all the other ingredients up to and including the pepper, mix in the feta, divide the mixture between the prepared dishes.
To bake
Approx. 20 mins. in the centre of an oven preheated to 200 °C. Remove, mix in the spinach, allow to wilt. Make a hollow in the middle of the vegetables, carefully slide an egg into each.
Return to the oven
Approx. 10 mins.
