Cottage cheese toasties with halloumi and peas
Ingredients
for 4 pieces
| 200 g | plain cottage cheese |
| 120 g | halloumi, grated |
| 120 g | frozen peas, defrosted |
| 2 | spring onions incl. green parts, cut into thin rings |
| ½ | lemon, the whole juice |
| 4 slice | bread (see note) |
| a little | pepper |
| 2 tbsp | crema di Balsamico (balsamic cream) |
How it's done
Open toasties
Mix the cottage cheese and all the ingredients up to and including the lemon juice in a bowl, spread onto slices of bread, season.
To bake
Approx. 10 mins. in the centre of an oven preheated to 200 °C. Increase the temperature to 230 °C (grill) and bake for a further 3 mins. Remove, plate up, drizzle with crema di balsamico.
