Chicken pitas
Ingredients
for 4 person
| ½ tbsp | olive oil |
| 1 tin | chickpeas (approx. 120 g), rinsed, drained |
| 2 pinch | salt |
| 1 | organic lime, use a little grated zest and 1 tbsp of juice |
| 1 tbsp | olive oil |
| 2 | chicken breasts (each approx. 150 g) |
| 1 tsp | ground cumin |
| ½ tsp | ground coriander seeds |
| ½ tsp | salt |
| 150 g | plain greek yoghurt |
| ½ bunch | dill, finely chopped |
| 4 | pita breads |
| 50 g | rocket |
How it's done
Chickpeas
Heat the oil in a non-stick frying pan. Add the chickpeas, stir fry for approx. 5 mins. Remove, season with salt. Add the lime zest and juice, mix.
Chicken
Heat the oil in the same pan. Season the chicken breasts, fry for approx. 6 mins. on each side. Remove, allow to cool slightly, cut into slices. Mix the chicken, yoghurt and dill in a bowl.
Pitas
Heat the pitas in the same pan for approx. 20 secs. on each side. Spread the rocket, chicken and chickpeas over the pita breads.
