Ingredients

for 8 pieces

Dough
100 g butter, soft
70 g sugar
¼ tsp salt
1 tbsp instant coffee
1 tsp water, hot
fresh egg
200 g white flour
½ tsp baking powder
Mascarpone cream
250 g mascarpone
1 dl full cream
1 parcel vanilla sugar
a little  cocoa powder, to dust

How it's done

Dough

Place the butter, sugar and salt in a bowl, mix using the whisk attachment on a mixer. Dissolve the coffee powder in the water, add it together with the egg, continue mixing. Mix the flour and baking powder, add, combine to form a dough.

Cookies

Divide the dough into 8 equal portions, shape into balls. Place on a baking tray lined with baking paper, leaving plenty of room between each ball, flatten gently.

To bake

Approx. 15 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.

Mascarpone cream

Place the mascarpone, cream and vanilla sugar in a bowl, whisk until creamy, spread on top of the cookies using a tablespoon. Dust with cocoa powder.
