Pork chops with strawberry salsa
Ingredients
for 4 person
| 200 g | couscous |
| 3 dl | vegetable bouillon, hot |
| 1 bunch | flat-leaf parsley, finely chopped |
| 1 bunch | basil, finely chopped |
| 250 g | strawberries, cut into cubes |
| 1 | shallot, finely chopped |
| ½ | red chilli pepper, deseeded, finely chopped |
| 1 tbsp | white balsamic vinegar |
| 1 tbsp | olive oil |
| ¼ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| 4 | pork chops (each approx. 250 g) |
| 1 tbsp | hot mustard |
| ½ tsp | salt |
| a little | pepper |
How it's done
Couscous
Place the couscous in a bowl, pour the hot stock over the top, cover and leave to absorb for approx. 5 mins. Separate the couscous with a fork. Add the herbs, mix.
Salsa
In a small bowl, mix the strawberries with all the other ingredients up to and including the pepper.
Pork chops
Heat the oil in a wide frying pan. Coat the meat in the mustard, season, add. Reduce the heat, fry for approx. 5 mins. on each side. Serve the chops with the couscous and salsa.
