Ebly pudding with caramelized apple

Ingredients

for 4 people

Ebly pudding
5 dl milk
125 g pre-cooked durum wheat (Ebly®)
1 tbsp vanilla pod, cut lenghtwise, seeds scratched out
Apple
1 tbsp butter
red-skinned apple, deseeded, diced
1 tbsp sugar
½ tsp cinnamon
To serve
½ tbsp sugar
½ tsp cinnamon
1 dl full cream, beaten until light and frothy

How it's done

Ebly pudding

Pour the milk and Ebly into a pan, add the vanilla seeds and pod, bring to the boil while stirring. Reduce the heat, simmer for approx. 15 mins. over a low heat, stirring occasionally to form a thick, creamy pudding. Remove the pan from the heat, remove the vanilla pod.

Apple

Heat the butter in a non-stick frying pan. Add the apple, sauté for approx. 1 min. Mix the sugar and cinnamon, sprinkle on top, simmer and stir for approx. 2 mins. until the sugar caramelizes.

To serve

Divide the Ebly pudding between small bowls, mix the sugar and cinnamon, sprinkle on top. Finish with the diced apple and cream.
