Invisible apple cake

A unique yet simple apple cake that is guaranteed to lift your spirits. The special thing about this cake is that the apples are thinly sliced and mixed straight into the batter. As the cake bakes, the thin slices disappear almost completely into the batter, making it incredibly moist and giving it that natural apple flavour, which spreads evenly throughout the whole cake. Perfect for grey days and little breaks – best enjoyed while still slightly warm and with a dusting of icing sugar on top.

Ingredients

for 12 pieces

Batter
150 g light spelt flour
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
eggs
1 ¾ dl oat drink
3 tbsp liquid honey
2 tbsp olive oil
1 kg apple, cut lengthwise into slices approx. 2 mm thick
To bake
1 tsp icing sugar

How it's done

Batter

Mix the flour, baking powder, cinnamon and nutmeg in a large bowl. Whisk together the eggs, oat drink, honey and oil, mix in. Add the apples, mix, transfer the cake batter to the prepared tin.

To bake

Approx. 50 mins. in an oven preheated to 180 °C (convection). Remove from the oven, allow to cool slightly, remove the cake from the tin and leave to cool on a rack. Dust with icing sugar.
