Onion rings with dip
Ingredients
for 4 people
| 100 g | mayonnaise |
| 100 g | sour single cream |
| 1 tsp | lemon juice |
| 1 bunch | chives, finely chopped |
| ¼ tsp | onion powder |
| ¼ tsp | garlic powder |
| salt and pepper to taste |
| 150 g | white flour |
| ¾ tsp | salt |
| ½ tsp | baking powder |
| 2 | egg yolks |
| 1 ½ dl | sparkling mineral water |
| 2 | egg whites, beaten until stiff |
| 1 pinch | salt |
| oil, for deep-frying | |
| 2 | onions (approx. 250 g), cut into rings approx. 5 mm thick |
How it's done
Dip
In a small bowl, mix the mayonnaise with all the other ingredients up to and including the garlic powder, season.
Batter
Mix the flour, salt and baking powder in a bowl. Whisk the egg yolks and water, pour into the flour while whisking, continue to whisk until the batter is smooth. Beat the egg whites with the salt until stiff, fold in carefully.
To deep-fry
Fill a pot to ⅓ with oil and heat it to approx. 175 °C. Stir the batter thoroughly. Dip the individual onion rings in the batter, allow to drain slightly, place them carefully in the oil, deep-fry for approx. 1 min. on each side. Remove the onion rings with a slotted spoon, drain on kitchen paper, serve with the dip.
