Green beans with parmesan crumble
Ingredients
for 4 person
| 500 g | green beans *-* |
| salted water, boiling | |
| 1 tbsp | olive oil |
| 2 | red onions, cut into thin slices |
| ¼ tsp | salt |
| 20 g | white flour |
| 40 g | grated Parmesan |
| ¼ tsp | cayenne pepper |
| 30 g | butter, cold, cut into pieces |
| 2 tbsp | lemon juice |
| 2 tbsp | olive oil |
| 1 tbsp | liquid honey |
| ½ bunch | thyme, leaves torn off |
| ½ tsp | salt |
How it's done
Beans
Cook the beans in boiling salted water for approx. 10 mins. until just soft. Rinse the beans in cold water, drain. Heat the oil in the same pan. Add the onions, sauté for approx. 8 mins., season with salt, set aside.
Crumble
Mix the flour, parmesan and cayenne pepper in a bowl. Add the butter, rub together using your hands to form a crumbly mixture. Spread the crumble on a baking tray lined with baking paper.
To bake
Approx. 15 mins. in the lower half of an oven preheated to 200 °C. Remove, allow to cool slightly.
Dressing
Place the lemon juice and all the remaining ingredients in a bowl, mix well. Add the beans and onions, mix, sprinkle the crumble on top.
