Grilled cauliflower with apricots

Ingredients

for 4 person

Apricot sauce
apricots
1 ½ tbsp lemon juice
1 tbsp olive oil
¼ tsp ground cardamom
¼ tsp salt
a little  pepper
Cauliflower and apricots
1 kg cauliflower
  salted water, boiling
apricots, halved, pitted
2 tbsp olive oil
Charcoal/gas/electric grill
¼ tsp salt

How it's done

Apricot sauce

Place the apricots in a measuring cup along with all the other ingredients up to and including the pepper, puree.

Cauliflower and apricots

Cut a cross into the cauliflower stalk. Cook the cauliflower in boiling salted water for approx. 15 mins. until just soft. Drain the cauliflower, brush the cauliflower and apricots with the oil.

Charcoal/gas/electric grill

With the lid down, grill the cauliflower over/on a medium heat (approx. 200 °C) for approx. 15 mins. all over. Grill the apricots alongside for the final 10 mins. Plate up the cauliflower and apricots, season with salt, drizzle with the sauce.
