Marrowbone crostini
Ingredients
for 4 pieces
| 1 kg | Beef bones with marrow |
| 1 tsp | sea salt |
| 120 g | bread, in 4 slices |
| ½ bunch | flat-leaf parsley, finely chopped |
| 1 tbsp | capers, drained, finely chopped |
| 1 | organic lemon, use a little grated zest and 1 tbsp of juice |
| 2 pinch | sea salt |
| a little | pepper |
How it's done
Marrowbone
Spread the beef bones on a baking tray lined with baking paper. Sprinkle with fleur de sel.
To roast
Approx. 25 mins. in the upper half of an oven preheated to 220 °C. Arrange the slices of bread on the oven rack and toast them for about 5 mins. in the lower half of the oven. Remove, allow to cool slightly.
Crostini
Mix the parsley with all the remaining ingredients in a bowl. Remove the marrow from the bones with a spoon, spread it with the herb mixture onto the slices of bread.
