Ingredients

for 4 people

Cucumber
cucumber deseeded, coarsely grated
½ tsp salt
Tzatziki
150 g plain greek yoghurt
garlic clove, squeezed
1 tsp white wine vinegar
a little  pepper
1 tbsp olive oil

How it's done

Cucumber

Mix the cucumber and salt in a sieve, leave to absorb for approx. 30 mins.

Tzatziki

Squeeze the water out of the cucumber, place in a bowl. Add the yoghurt and all the other ingredients up to and including the pepper, mix, plate up. Drizzle with oil.
